How To Make Autumn Spice Cookies

As soon as September hits every coffee shop is plastered with Pumpkin spice this and Cinnamon that, so if you fancy bringing some of these Starbucks vibes to your house then you're gonna love these Autumn spice cookies. They're warm and cosy and everything you want when the leaves start turning brown and we're ready to hibernate and get fat again! 
STEP ONE:
Cream together 250g of butter, 165g of caster sugar and 165g of brown sugar 
STEP TWO:
Beat in one whole egg and once combined add 1 teaspoon of vanilla extract, 1-3 teaspoons of cinnamon (depending on how you like the flavour) 1 teaspoon of mix spice and a pinch of ground ginger, along with a splash of golden syrup - LUSSHHHH
STEP THREE: 
Once combined sift in gradually 335g of plain flour and 1 teaspoon of bicarbonate of soda, at this point you can choose to mix in some dried fruit or nuts. Mix until you're left with a giant dough ball and leave in the fridge for 1 hour. Once ready roll level balls of dough onto a baking tray and leave about 4cm apart from each (about a heaped teaspoon should be big enough) and bake for 12-16 minutes in an oven set to 180oC and there you have it! Perfectly gooey yet crispy biscuits to get you feeling all cozy and ready for Autumn!
